CHEESE KITCHENS, TILLAMOOK CHEESE FACTORY
The solid curd is cut and turned in the matting, cheddaring process by the workers. Cloverdale and other community factories do the same operations.

I guess they really wanted people to know that cutting the solid curd was best practice in the cheesemaking industry.
